Broccoli Egg Bites

Greyson is at that age where she really wants to feed herself. I struggle with this sometimes as it makes a huge mess that I will have to clean up, so I tend to stay away from things with sauces right now. Finger foods are idea, so she can pick them up and feed herself with minimal mess. These broccoli egg bites are so perfect, they are super easy, flexible with whatever veggies you have on hand, and super yummy. For this particular batch I had some left over carrot pulp from juicing so I through some of that in there as well. Bonus veggies!

YOU WILL NEED

4 Eggs

2 cups of steamed veggies, finely chopped

1/4 cup milk of choice (I used homemade cashew milk)

salt, pepper and garlic powder to tast

**optional 1/2 cup of shredded organic cheese

WHAT TO DO

Preheat oven to 375˙F

In a medium bowl beat the eggs and the milk, add the veggies, seasonings and cheese if using.

Pour in mini muffin tins, filling about 3/4 of the way, they will expand.

Cook for about 20 minutes or until just golden on the top. let cool slightly and serve. Will keep for 5 days in the fridge, or make a big batch and freeze them!
